Chef Laponzina was born in New York and grew up in an Italian family. He was raised in Atlanta, attended the Culinary Institute there and worked his way up the ladder for over a decade in a variety of restaurants in Destin, Florida, Canberra, Australia and Atlanta before arriving in Augusta in 2010.
His menu design includes a blend of Italian dishes, steaks, chops and his take on traditional dishes with a distinctly regional twist. His worldly palate is in keeping with current culinary trends; yet not trendy. It's honest; using the finest, freshest product and sourcing local, regional and emerging producers whenever possible. He's introduced in house preparation of cured meats and pickled vegetables.
The restaurant has been open for 23 years, the Augustino's concept was introduced 18 years ago and since arriving, Chef Laponzina has taken it to the new heights. Augustino's continues to evolve under his careful direction keeping up with current tastes and continuing to deliver an experience that comes straight from the heart. Front and center the food is the star here, he and the talented staff allow you to enjoy delicious and savory dishes without distraction. In addition to his duties in Augustino's he also oversees the kitchen and menu operations of the Augusta Marriott at the Convention Center.
